This isn’t even technically a recipe, as you basically mix a few ingredients together – that’s my kind of baking!

These are heavenly, and a great way to use up old, dying bananas, plus they only need 3 ingredients (plus optional extras).  Try them and marvel at the ease. It is more banana bread-y then cookie-y in terms of texture, but if you bake them for longer (like I do) then you get a wonderful crispness on the outside and soft gooey-ness on the inside (cue voice over from Greg Wallace on Master Chef).

Ingredients:

  • 2 ripe bananas
  • 1 cup oats (I use Scott’s Original)
  • handful dark chocolate chips

Optional extras:

  • Dash of salt
  • 1 tsp vanilla extract
  • Sprinkling of Cinnamon

Directions:

  1. Pre-heat oven to 180 degrees C
  2. Line a baking tray with baking parchments
  3. Mash the banana in a medium sized bowel
  4. Add the oats and mix well
  5. Mix in the optional extras if using and the gently stir in the chocolate chips
  6. Using a tablespoon, scoop a dollop of the mixture on the baking tray, and flatten into cookie shapes. Continue with the rest of the mixture spacing them evenly apart.
  7. Bake for 20-25 minutes (keep checking them – you want them a golden brown colour on the outside).
  8. Place on a wire rack to cool.

Yields roughly 8 cookies.
